Wow. Last night was just proof that I have the greatest friends on the planet.
After my lunch, I jumped on a 3:35 train in Hartford to Penn Station in New York City for a dinner party thrown by one of my best friends from highschool. I started going to these weekly gatherings last year when I lived in the city, and ever since I moved home I’ve tried to go home at least once a month. Angelina, the hostess, is a phenomenal cook, and last night her dishes did not disappoint.
When I got to her apartment on the Upper East, I was starving, but dinner wasn’t ready yet. I settled for a glass of white wine first off:
And a couple bites of Angelina’s homemade Pea Artichoke Hummus, which to me tasted more like a spicy pesto. I LOVED this, and I hate peas!
Dinnertime brought a huge assortment of summer-inspired beauties!
On that plate is Arugula, Fennel and Apricot Salad with Pistachios, Roasted Mushrooms and Shallots with Fresh Herbs, and Moroccan Halibut with Spiced Carrots.
Everything was light, flavorful, and absolutely delicious. I particularly loved the giant chunks of shallot and the cinnamon-infused carrots! The halibut, too, was absolutely delicious, although super duper spicy; at one point the spices exploded in my throat and I was seized with a coughing fit!
Despite this, I ended up having a smaller plate of seconds of about everything, but when dessert rolled around I was more than ready to tackle it!
Coconut-Mango Frozen Yogurt with Toasted Coconut!
I have got to learn how to make this at home. It was thick and rich but not heavy at all, and the coconut was perfectly toasted, giving the dish a big amount of crunch.
And then Angelina had to go and bring out the leftover yogurt, and I ended up picking at it a few more times:
Needless to say, I left one happy camper.
I didn’t get much sleep last night but I ended up making my 8:30 train just fine. While I waited at Penn Station I hit up Starbucks and a Primo! to load up on caffeine, food, and hydration:
This was a new flavor of vitaminwater zero for me. It was a peach-melon combination and contained a lot of vitamin B, which was exactly what I needed this morning! I also got a half-caf venti black unsweetened iced coffee from Starbucks, to which I added two Splenda, much to my annoyance; I tend to avoid any artificial sweeteners in favor of stevia, but they don’t carry any of that at Starbucks unfortunately.
For breakfast, I chose to stick with Starbucks. I gazed longingly at the feta wrap before settling on an old standby: Oatmeal!
I got a plain Perfect Oatmeal with a large banana, which I stirred vigorously into my oats to create a whipped, full bowl. Absolutely perfect for an early morning, and it provided a lot of potassium which helped me hydrate!
Halfway through my train ride, I ate…or should I say demolished…an orange.
Don’t worry, I cleaned up!
Right now I’m eating my lunch, and will be back later on tonight to recap those and my dinner. I think I see sweet potato fries in my future…
