Carbs, carbs, and more carbs

I need to get off this carb train I seem to have hopped on.  It’s making my blood sugars go berserker, and my tummy reacted big time today.  However, everything I had today was delicious, so I’m not apologizing for anything I ate!

I went to bed last night craving waffles.  I woke up this morning dreaming about waffles.  So…I had to make waffles, right?

I topped two Vans Lite Waffles with a Honey Chobani and 1/2 microwaved apple that I topped with a blob of Stonewall Kitchen Strawberry Apple Rhubarb Jam.  I ate the other half of the apple while the food was toasting/microwaving.  I think I also drizzled a little bit of maple syrup on it, too.  
I ate this dish outside on my porch, while the birds chirped in the early morning.  It was the perfect breakfast.  
After running errands all morning I managed to rush home to throw together a quick snack of carrots and cashew butter.  I accidentally left my Justin’s Maple Almond Butter at the beach, but I’ll be able to go back and get it in a week or so.

After some more errands, it was time for lunch.  I had been craving some egg whites in a wrap, so I ended up throwing together a Southwestern sandwich that ended up being pretty amazing!

I made a frittata of sorts in a skillet with 3 egg whites, a handful of chopped peppers/onions, and another handful of Daiya Vegan Cheddar.  I served it in a Joseph’s Lavash with some spinach and Brianna’s Santa Fe Vinaigrette.

This thing was messy.  Really messy.  So messy I had to wipe my hands every time I took a bite.  But it was much better than any Starbucks wrap, and less punishing on my tummy.  I finished off the meal with a small bowl of cherries.

Unfortunately, after that, my stomach was not happy.  It yelled at me while I attempted a 3.2 mile run around my neighborhood (and sidebar: Running on hills after you’ve spent a week running on flat land is NOT fun).  There were a couple of moments where I doubled over in pain.  Add to that the fact that I wasn’t used to running in the height of day, and you’ve got bad, bad run for Ally.

I came back and prepped my dinner to take with me to the office, snacking on an Apple Pie Mini Larabar.

I haven’t really expressed my love for Larabars on here yet.  They’re the most simple bars on the face of the planet.  My favorite flavor, Peanut Butter Cookie, contains “Peanuts, Dates, Salt”.  That’s it.  They’re mostly organic, totally vegan, and perfect for an afternoon pick-me-up.

My dinner was a bit…weird for me.  I don’t usually crave chicken sausage.  But tonight I wanted it, and wanted TWO of them.

I sauteed brussels sprouts, onions and peppers in 1tsp walnut oil, then added 1 Bilinski’s Pesto Romano Sausage and 1 Applegate Farms Sweet Italian Sausage and heated both of them through.  I put them in a carrying case and also packed a Joseph’s Pita to stuff the mixture in:

It was delicious, if a bit off-kilter for me.  I’m used to just lean chicken and veggies at night, not sausages and peppers! But my dad would’ve loved it that I was having something like this…as Italians, we’re supposed to all enjoy sausage and peppers on some bread sometimes.

After a wonderful, restorative, challenging yoga class (my new favorite pose is Dolphin!), I ate a delicious, juicy peach.

Off to catch up on Pardon the Interruption and get some sleep.  Getting up early to do my routine, which I think works much better for me!
