Everyone should watch Losing It With Jillian. It is so inspiring how she helps to fix those families.
Yesterday was a VERY busy day. I decided to push my workout to the afternoon and slept in a little bit until the late hour of 7:15. I fixed a quick breakfast of Fage 2%, Pink Lady Apple, Cinnamon English Muffin, and Smart Balance w/ honey
Fage is definitely my favorite plain Greek Yogurt. It’s so thick! But as far as flavored Greek yogurts, Chobani wins the day.
While I packed my lunch, I snacked on some cherries-
I was meeting Connie to see Toy Story 3 after rehearsal, so I wouldn’t have time to eat lunch. I packed a Turkey/Cranberry Jelly/VeggieSlice wrap with baby carrots and a nectarine.
I love putting jam into my turkey sandwiches! It’s a great combination of sweet and savory.
Toy Story 3 was amazing! I want to keep all of my childhood toys even more now.
After the movie (and a quick stop at a thrift store), I snacked on a Quaker Toasted Coconut Banana Macadamia Nut bar.
After my quick workout (20 minutes of weights, 30 minutes elliptical) I was ready to try some cellophane noodles. I have a lot of peppers, onions, and mushrooms that I needed to use up before I go to the beach, so I threw everything into a skillet and sauteed it in sesame oil with the cellophane noodles and topped it with 1/2 block of lite tofu i had marinated in peanut sauce while i worked out.
I think this is going to be my go-to Chinese food from now on. It was absolutely delicious, and surprisingly easy on the tummy.
I paired it with a big serving of steamed asparagus with ketchup, of course.
Such a great dinner.
After dinner, I did a boatload of laundry and went to visit some friends at a local theater while they rehearsed a musical revue. I stayed for about two hours and absolutely loved watching my friends sing and dance their way through a number of different songs. At the advice of Connie (who helped!) I put together a crudite pack of carrots, pepperoni, broccoli and ranch dip. I also put in some cheese slices and crackers.
I actually ended up leaving it as a surprise for them to find at the end of rehearsal, although some of them saw it and exclaimed “Did you bring us munchies!?” Yes I did!
Connie had brought me some of her mother’s ni huang bao (custard filled steamed buns), and I knew they would make the perfect car ride snack for Friday, but I needed something when I got home from rehearsal to hold me over for my planned 4.3 mile run this morning. So I ended up making Oreo Banana Ice Cream.
I threw 1 overripe frozen banana into the food processor with 1 tbsp cocoa powder and 1 Oreo cookie. I topped it with a dollop of pumpkin butter.
So satisfying.
