A picnic-style lunch? Must be a Wednesday.
Pecan Pie Larabar, Dark Chocolate Wallaby Yogurt, Peach
Needless to say, I was on a sugar high for the rest of work.  That yogurt was simply divine.  The Larabar, too, was fantastic.  The peach, however? Mealy and bland.  I was bummed.  I’m purchasing a lot of peaches today in order to whip up a vegan blueberry-peach cobbler, and I couldn’t be happier.
After work, I swan-dove into a big bag of Trader Joe’s Peanut Butter Pretzels.
It wasn’t a portioned bag, as a few extras may have found their way in there.  😉
After work, I kept my workout short: 20 minutes of a weights DVD (Jackie Warner, your Power Burns are insane!) and 35 mintues on the elliptical, watching Jenna Lyons of J.Crew talk about her dream job.  I love J.Crew.  I worked there for close to two years, and loved every second of it…well, except for the days I had to stay overtime to fold new arrivals!
Dinner was a recreation of lunch from a few days ago.  I still had a serving of cooked lobster meat, so I toasted an Arnold’s Sandwich Thin and mixed the meat with light mayo, and served it alongside a newcomer to my kitchen: Yucca!
I roasted it in the oven for about 20 minutes, and my verdict? Good, but chewy.  Not crispy (although some of the smaller ones were crispier).  I’d buy it again, though.  Perhaps next time I’ll steam or boil it?
For dessert…vegan banana chocolate ice cream with Trader Joe’s Mini Peanut Butter Chocolate Chips!
Yummers.  I also threw in some nutmeg into the banana mixture.  I honestly can say that if it weren’t for blogs, I wouldn’t have found any of these recipes…or even dared try yucca or rutabaga! Now, I’m so happy that I found blogs because they’ve inspired me to be healthier, but also to eat heartier.  I still have problems with calorie counting, but it’s getting better.  Yes, I still count a little, but it’s with the foods I want to eat, not the foods I feel like I have to eat.
Take today’s breakfast for example.  During my 5 mile run this morning I kept thinking I knew what I wanted for breakfast: a smoothie and waffles.  That was what powered my run when it got hard, and it’s what drove me to my house in a frenzy, seeking to throw together a Green Monster.  But then I saw my brother eating his own breakfast.  Eggs, and Pepperidge Farm Cinnamon Raisin Toast.  My mind immediately switched.  I wanted EGGS.
I enjoyed 3 eggs with Newman’s Own Salsa, along with two pieces of cinnamon toast topped with smart balance and honey, and a side of several sliced strawberries.
Ohhhhh yeah.
I also ate a few pieces of watermelon but I’m kind of regetting it…they’re starting to go south, and they tasted slightly slippery. 
I honestly have no clue what I’ll be preparing for lunch/dinner.  We shall have to see! Although I didn’t have a lot of veggies in the fridge so I think I’ll be prepping something with lots of green.  And that avocado is ready!
