Hot Tomatoes

A little note to self:
If you don’t know if you’ll get back to the house in time for lunch, for God’s sake, pack something!

I didn’t get home to eat lunch until exactly 2:15! I was so hungry I just threw things onto plates and shoveled this spread into my mouth:

Two giant carrots with 2 tbsps hummus, and a La Tortilla Factory Multi-Grain wrap stuffed with low-sodium turkey, mustard, 1/4 an avocado, and spinach.

The avocado was gross.  I had put it in the fridge too soon and it wasn’t nearly soft enough to spread.  It was almost frozen!

Hangry Monster may have devoured 2 bowls of this as well (I ended up saving the apple)

Giant grapes at the market, so glad they’re back in season!  And cherries are almost on their way out.  😦

This kept me full for a good six hours! I met a friend for coffee and had a good chat, then came home around 8:30 and craved a light dinner but still substantial.  I just wanted some veggies topped with pasta sauce.

I sauteed Brussels sprouts, broccoli, and tempeh together, then put the tempeh into a pot with 3/4 cup pasta sauce mixed with buffalo sauce for kick.

I served the veggies with the tempeh pasta sauce, red pepper flakes and nutritional yeast sprinkled on top, with 5 Kashi Crackers on the side.  I spread two with mango chutney, just for fun.

The mango chutney gave the crackers a taste akin to pappadams, the thin cracker served at the top of meals in Indian restaurants.  I am a sucker for Indian food.
This meal was exactly what I wanted.  Filling, spicy(!!), and with a crunch from the veggies and crackers, yet still light.  I sauteed the veggies until soft, but the broccoli was still slightly al dente.  Al dente, by the way, is Italian for “of the tooth”, or that soft bite you get from perfectly cooked pasta/veggies. 
I kept dessert light as well: a plum with two pieces of chocolate.
