A sick day standby

Today was the laziest I have been in months.  I didn’t move from the living room except to get up and use the bathroom, make my meals, and do my laundry.  I’m actually very pleased by this last piece…I didn’t think I’d have the strength to to it, but it’s all folded and pretty in my laundry room!

My lunch went unphotographed, but it was yummy and safe for my sick self: a can of chicken noodle soup, more Wasa crackers with vegan cheese melted on top and spread with Marmite, and a sliced apple.  Then about four hours later, I snacked on two giant sliced up carrots.

After folding and putting away my clothes, I decided it was time to dinner.  I chose to whip up a mostly-vegan version of my favorite meal to eat when I get sick.  My mom asked me what I was planning to make for dinner, and she smiled when I told her.  Because, really, is there anything more comforting when you’re feeling poorly than a grilled cheese sandwich and tomato soup?
I started out by slathering two pieces of sprouted flaxseed toast from St. Alvarado Bakery with Smart Balance, and placing two Mozzarella Veggie Slices as well as a little handful of Mozzarella Veggie Shreds in between.  I crisped the sandwich in a skillet with 1tsp olive oil and a little bit of Pam until crunchy and crisp…and burned.  Oops!

I love the Veggie Slices, they melt so beautifully.  You can’t tell, but I cut one piece much bigger than the other.  When I was a child, I always forced my mom to cut one slice bigger so it felt like a treat.  It was a huge deal with all of my sandwiches, especially peanut butter and jelly!

I paired my sandwich with a bowl of Amy’s Low-Sodium Tomato Soup, my current favorite tomato soup.  Yes, it may even beat my childhood’s beloved Campbell’s condensed tomato.

This was the perfect meal for my sick self.  If I could have this every night for dinner, I would be so happy.  I’ve told my mom it’s the ultimate in illness therapy.  She said, “Well, the ultimate should be chicken noodle.” I agreed, but I had already eaten that for lunch!!!

Although I think next time I’ll pair this meal with some roasted Brussels sprouts or broccoli, just to get some more veggies in, but my tummy can’t handle a lot of fiber at the moment.  No biggie.  I still had plenty to eat today.

Then after doing my dishes, I enjoyed a dish of orange and strawberries.

Time to snuggle up with some hot tea and rest up.  I’ve got a day of work tomorrow.  But sometimes you just need a day to yourself, where you rest and recuperate from the hard week.  I am proud of myself for getting a run in this morning, though!
