Yesterday was exhausting. I ran 5 miles then realized that maybe I didn’t get enough sleep to run those 5. I managed to fuel properly, but my body was saying “Enough!”
Repeat of Thursday. Protein yogurt, corn muffin with raspberry jam and smart balance, and an apple for dippy-do.
Sandwich thin with melted Veggie Slices and apricot jam. Try it, it’s good!
Along with a big ol’ bowl of minestrone soup:
And a plum with a bunch of strawberries.
Dinner went unphotographed but it was pretty wonderful. Mom cooked up grilled chicken, corn on the cob that she then sauteed with olive oil, a fresh salad with vinaigrette, broccoli, and asparagus. Wonderful and comforting.
Dessert was a bit of a take on a peach crisp, but for one! I microwaved a peach, then crushed two amaretti cookies and put some frozen yogurt on top.
Today was my day off from working out, but my day OF work. I knew I wouldn’t be eating much at work so I kept my breakfast hearty: 3 eggs, English muffin with some coconut oil, and fruit.
Lunch: a Maple Pecan Probar with a peach. I LOVE this flavor, and it kept me full for a good three and a half hours.
I threw dinner together immediately when I got home.
1/2 cup leftover roasted corn. So delicious! Like candy.
Along with roasted asparagus and carrot:
And a chicken breast on a sandwich thin with a Veggie Slice, light mayo, arugula, onion, and hot sauce.
And for dessert? Soy peanut butter chocolate ice cream with a tsp of Trader Joe’s Flaxseed Peanut Butter on top, along with Reddi-Whip!
Oh holy crap. I was SO happy when I got the idea to put the PB on top. It got gooier as it spread, making it almost like a warm peanut buttery topping you find in a sundae shop. Only almost 100% vegan.
Now I’m thinking about having some cherries, and drinking plenty of tea.
I noticed this morning that I’m getting a little bit thin. My stomach disease is one that prevents me from eating as much as I should, so my weight ebbs and flows when a flareup is imminent. If I go up three pounds, I look great. If I go down five, which I think I have, I don’t look so good. It sucks. But I know that I’m trying my very best to take care of myself through proper diet and exercise. I just need to get my rest squared away.
Now, off to watch some gluttony on Man Vs. Food. God, I love this show. Adam is trying to chow his way through 7 pounds of crab legs. Holy smokes! I love me some crab, but wowza.

and from the looks of it, you are eating very healthy. I wouldnt be worried about how you look, it all depends on how you feel.
