I managed to use pumpkin in my breakfast, snack, and dinner yesterday!
Lunch, however, was dedicated to the avocado yet again. I need to go out and buy more.
Salad with 1/4 avocado, spinach, tuna packet, Santa Fe dressing, goat cheese, and a handful of salted cashew pieces.
Together with two rice cakes piled with hummus and the other 1/4 avocado.
I ended up putting salsa on this, too. Lunch dessert was a plum and two strawberries.
For my afternoon snack I had a rice cake smeared with Better’n Peanut Butter and pumpkin butter and a cup of grapes, then took a study break to go on the elliptical for a little bit, just to clear my head. I may have brought a textbook down to read on the machine, though!
Dinner was pretty awesome if I do say so myself, although I felt bad for not being able to go out with some friends. Studying called me, however, and I also didn’t want to slave in the kitchen for too long. Before I showered I threw together a quick dinner of pumpkin flax crusted tofu (recipe coming soon) with brussels sprouts and parsnip fries. When I got out of the shower, they were ready to be baked.
Next time I’ll put more flavorings in the pumpkin flax crust. It was seriously bland until I put a little bit of agave nectar on top of it. And the parsnip fries? I was underwhelmed. They didn’t taste excellent the way rutabaga and sweet potatoes do when they’re roasted. Instead they were like carrot fries: Just okay. But everything’s better when dipped in ketchup!
My dessert, again unpictured, was a microwaved peach topped with some blueberries, as well as a smidgen of granola on top as a kind of peach/blueberry crisp.
Breakfast before work today was big, and it kept me full for a good four hours. I enjoyed two eggs, one Morningstar Farms Maple Soy Sausage, and a Double Fiber English Muffin (9 grams of it in this baby!)
Lunch was a Banana Boom ProBar and my afternoon snack was an orange. I know that doesn’t sound like a lot, but the ProBar is huge, and kept me full until I got home.
Mom had company for dinner, so I enjoyed a big old spread of pasta, salmon, tomato sauce, roasted green beans, and a salad which I dressed with balsamic vinegar and a bit of agave.
Then for dessert (again unpictured!) I had a Strawberry Cheesecake yogurt from Dannon, the last of my Reddi-Whip, and a little bit of melted chocolate fudge on top. I also stole some bites from the pie crust of an apple pie my friend brought over!
Tomorrow, I plan to tackle that 6 miler (hopefully, I can’t promise anything!) and then join my best friend for some outlet shopping in Clinton…as well as getting my hands on the best part of fall…Pumpkin Spice Latte, here I come!
