This bowl literally has everything. Tang from the cranberries, a sweet kick from the orange juice, melty almond butter, crunchy almond slivers and apple chunks…all for around 470 calories.
Triple Cranberry Apple Orange Almond Oatmeal.
1/3 cup fresh cranberries (Ocean spray!)
1/4 cup orange juice
1/3 cup oats
2 tbsp oat bran (I used Bob’s Red Mill)
1 tbsp ground flaxseed meal
1 small apple (I used Mutsu)
Microwave (or cook on stove) first 5 ingredients in water until cranberries can be cut at the touch (or they burst if you poke them hard enough with a knife). Chop 1/2 apple, add it to mix, microwave until apples are soft. Then add water until it reaches your desired consistency. Because this includes oat bran, make sure you add enough water so it’s thick but not gluey, as oat bran can get gluey if you don’t. You can also just do straight up oats as well. Then, proceed with other toppings, and perhaps microwave it again so the almond butter gets all melty? I also popped a packet of Stevia on this as well, just to make sure the flavors were more pronounced. Serve with one strong cup of coffee, and proceed to swoon with the holiday cheer.
As you can see, I have unofficially retired pumpkin from my repertoire. Now, it’s all about the cranberries, peppermints, dark chocolates, figs, pomegranates…mmm. Can I throw all of that into an oatmeal bowl?

PS. A note on the fresh cranberries…you MUST heat them to experience their true flavor. I can’t express it deeply enough. If you bite into a raw cranberry, the tartness is overwhelming to the point where it’s unusable to me. The orange juice also gives out a great flavor. I can’t wait to experiment more with that combination! I should make bread, too. Gah, I have so many things I need to bake!
